5k Color Run

 My best friend and I did a 5k color run. I was so excited to finally do one because everyone kept raving about them all summer long. I mean come'on! You run and by the end of the race you become a rainbow. (bonus!) Where's the unicorn?! As much fun all the running and the coloring seems. It wasn't so much fun. Overall, I think everyone who gets a chance to do one should! Just to get it out of your system plus who doesn't like great photos you can post on facebook?! Here are my great photos! 
This past weekend I purchased two cameras! GO PRO and Canon!! I have a few projects up my sleeve on how I want to incorporate them with my running! Stay tuned!

Last thing, I wanted to share is this video because its so inspirational! I love watching videos just like these because its part of my movement I want to create! Never give up! You can accomplish anything you set your mind on! :)

Homemade Chicken Tenders

This week I learned how to make REAL chicken tenders! It's so simple! I couldn't believe I had not learned how to make these! I am always trying to find new ways to cook healthier versions of my favorite foods but I really wouldn't call this "healthy eating". It's just a better version that doesn't contain so much grease or sodium like the restaurants chicken tenders. You only need 4 ingredients plus water. That's it!


Chicken Breast (cut into long thin strips)
1 or 2 cups of Flour ( I actually used whole wheat flour and they were still delicious!)
1 1/2 tablespoon of seasoned salt (You can try any type of seasoning. I'm going to try lemon pepper next time!)
1 cup of vegetable oil
2 cups of water 
Heat frying pan with vegetable oil for about 4-5 minutes under low-medium heat. Mix the flour and seasoned salt in one bowl and place water in another bowl. Once you have all your chicken cut into strips, dip the chicken into the water bowl, then dip into the flour bowl but repeat the process two times. So, dip the chicken again into the water bowl (briefly, dont soak it in) and back into the flour bowl. (You can do it three times if you want them a little more crispy!) So now you are ready to fry! Place chicken in the oil. Let them simmer and fry for about 4-5 minutes or until well cooked.

Rock N Roll San Antonio Half Marathon

This past weekend I participated in my first half marathon! I am excited on participating and finishing this huge goal in my life! Yes, life. I would have never in a million years believed that, I, Leslie would have completed a half marathon! I am so ecstatic that I keep posting pictures on instagram about it!! I find it so accomplishing because I come from a background with no fitness. Growning up my parents did not encourage me to exercise or pick up a sport in school. I always just found an interest for sports and being outdoors but I could just not get the hang of it. I played soccer, softball and golf in high school but I just never was encouraged to go on and beyond. When I was 23 a friend asked if I wanted to play in a co-ed soccer team. I accepted because I wanted more physical activities besides cardio. After playing a few games with the team I realized I didn't have the same stamina as I when I was younger. So I began running a mile or two every other day. It so happens that my friend asked me if I wanted to participate with him in a 5k. So I did and it was love at first sight! I was hooked on running and the rush after that. I started signing up for every 5k I could find and running about 10-15 miles a week. I finally decided to do a half marathon and here I am today: Leslie, half marathoner! I just love it :) I truly have to give credit to my best friend for always giving me my little push when I don't feel like getting a run in. He is my coach and mentor. I couldn't have done it all by myself. He is my right foot! :)  Here are a few photos from this weekend. 



Being my first half marathon I do believe it was a bit tough. Only because I didn't feel hydrated and prepared enough for the heat and humidity from San Antonio. I was really hoping it was going to be cool temperatures! I pulled a 2:25:42. My running group keeps telling me that's not bad for my first half but I was really hoping for less than 2 hours! The only thing that made me feel that it was successful and worth it was the pasta I ate at Cheesecake factory! So its okay! I have plenty of time to work on my running and become pro! ;)  Anyways, I will be working on my speed training and hills for my next half! Its only 3 months away!
